Vegetarian Recipe: Curried Chana Dal Risotto

  • 1 cup dry China Daal
  • 3/4 cup dry millet
  • 1 cup grated carrots
  • 1/3 cup raisins
  • 1 cup shitake mushrooms
  • 1/2 medium onion, diced
  • 2 garlic cloves minced
  • 2 cups frozen broccoli rabe (or other leafy green like kale or spinach)
  • 1 1/2 cups milk or milk substitute (i.e. plain almond or rice milk)
  • 2 1/2 cups chicken broth
  • 1/4 cup nutritional yeast
  • 1/2 tsp salt
  • 1 tsp curry

Instructions

  1. Put all ingredients in a 3-quart soup pot, cover, and bring to a boil
  2. Reduce heat to low and simmer for 30 minutes
  3. Stir often
